Juicy marinated chicken breasts topped with a vibrant blend of cherry tomatoes, onions, and fresh basil. This delicious low-carb dish is packed with flavor!
Arrange the chicken breasts in a 9x13-inch baking dish.
In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, Italian seasoning, and salt. Pour the marinade over the chicken, turning the pieces to coat thoroughly. Let the chicken sit for 10 minutes while preheating the oven to 425°F (220°C).
Once the oven reaches the desired temperature, bake the chicken for 25-30 minutes or until it reaches an internal temperature of 165°F (74°C).
Meanwhile, in a separate bowl, combine the cherry tomatoes, red onion, basil, minced garlic, balsamic vinegar, olive oil, and salt for the bruschetta. Toss well to blend the flavors.
When the chicken is fully cooked, remove it from the oven and sprinkle the shredded mozzarella over the top. Spoon the prepared bruschetta mixture over the chicken breasts and return the dish to the oven for an additional 5 minutes, allowing the cheese to melt and the tomatoes to warm through.
Notes
For meal prepping, store the bruschetta mixture separately from the chicken. Reheat the chicken first, then top with the bruschetta and warm slightly before serving for the best texture and flavor.
